These roasted red potatoes are a staple in my kitchen because they go with just about anything. I love how the simple seasoning lets the natural, earthy flavor of the potatoes really shine through. My mom used to make these for family dinners, and they always bring back such happy memories.

The secret to getting that perfect texture is to keep your potato chunks on the larger side. If you cut them too small, they tend to dry out before they get that lovely golden crust. Also, don't skip the parchment paper, as it makes cleanup so much easier.

Ingredients

  • 2 pounds red potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley for garnish

7Instructions

  1. 1

Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

Scrub the potatoes clean and cut them into even two inch chunks.

  3. 3

Place the potato chunks in a large bowl and drizzle with the olive oil.

  4. 4

Add the garlic powder, salt, and pepper to the bowl and toss everything until the potatoes are well coated.

  5. 5

Spread the potatoes on your prepared baking sheet, making sure to place them with the cut side down for the best browning.

  6. 6

Roast for about 30 to 35 minutes, or until the edges are deep golden brown and the centers are tender when pierced with a fork.

  7. 7

Remove from the oven, garnish with fresh parsley if you like, and serve while they are hot.

Tips

Serve these warm right out of the oven for the best texture. If you happen to have leftovers, you can store them in an airtight container in the fridge for up to three days and reheat them in a hot oven to bring back the crispness.
