Classic Sweet Potato Souffle with Pecan Topping
A light and fluffy holiday side dish that highlights the natural sweetness of roasted potatoes with a crunchy nut topping.
enzo81.xyzThis sweet potato souffle is a favorite at my house during the holidays because it is so light and airy. Roasting the potatoes instead of boiling them really brings out their natural flavor, so you do not need nearly as much added sugar to make it delicious.
The crunchy pecan topping gives it a great texture that everyone seems to love. It is a simple dish to put together, and you can even do most of the prep work a day in advance to keep things easy on a busy holiday morning.
Ingredients
- 3 large orange sweet potatoes
- 2 large eggs
- 4 tablespoons butter, softened
- 1/4 cup milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup chopped pecans
- 1/4 cup brown sugar
- 2 tablespoons melted butter
- 2 tablespoons unsweetened flaked coconut (optional)
11Instructions
- 1
Preheat your oven to 400 degrees and prick the sweet potatoes a few times with a fork.
- 2
Place the potatoes on a baking sheet and roast them for 45 to 60 minutes until they are very soft.
- 3
Once the potatoes are cool enough to handle, peel away the skin and place the orange flesh into a large mixing bowl.
- 4
Lower the oven temperature to 350 degrees and grease a medium baking dish with a little butter or oil.
- 5
Add the eggs, softened butter, milk, maple syrup, vanilla, and cinnamon to the bowl with the sweet potatoes.
- 6
Use a hand mixer to beat the mixture until it is completely smooth and fluffy.
- 7
Spread the sweet potato mixture evenly into your prepared baking dish.
- 8
In a small bowl, stir together the chopped pecans, brown sugar, melted butter, and coconut if you are using it.
- 9
Sprinkle the pecan mixture evenly over the top of the potatoes.
- 10
Bake for about 40 minutes until the edges are set and the topping is golden brown.
- 11
Let the dish rest for 5 minutes before serving so it can set properly.
Tips
To make this ahead of time, store the filling and the topping in separate containers in the fridge for up to 24 hours. When you are ready to serve, spread the topping on and bake as directed. Any leftovers can be kept in an airtight container for three days and reheated in the oven.
