Rich No Bake Chocolate Cheesecake
A decadent and silky chocolate dessert that sets perfectly without the need for an oven or gelatine.
enzo81.xyzThis chocolate cheesecake is truly special and perfect for when you want to impress your guests or treat yourself to something luxurious. It is incredibly creamy and has a deep chocolate flavour that hits the spot every single time without being overly sweet.
Because this recipe uses melted chocolate to set the filling, it is much easier to make than traditional baked versions. Just remember to use block style cream cheese and good quality 70 percent cocoa chocolate to ensure everything firms up beautifully in the fridge.
Ingredients
- 250g Oreo cookies (or any plain chocolate biscuit)
- 80g unsalted butter, melted
- Pinch of salt
- 360g 70% cocoa chocolate, chopped (divided into 260g for filling and 100g for ganache)
- 500g block style cream cheese, softened
- 1/2 cup caster sugar
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- 2 tablespoons hot water
- 300ml thickened cream (heavy cream), divided (200ml for filling and 100ml for ganache)
- Whipped cream and chocolate shavings for decoration
10Instructions
- 1
Crush the cookies into fine crumbs using a food processor. Mix with melted butter and salt until combined, then press firmly into the base of a springform pan. Chill in the fridge.
- 2
Bloom the cocoa powder in the hot water and set aside to cool.
- 3
Melt 260g of the chocolate in a heatproof bowl set over simmering water. Let it cool slightly.
- 4
In a large bowl, beat the cream cheese, sugar, and vanilla until smooth and creamy.
- 5
Add the cocoa mixture and melted chocolate to the cream cheese, beating until well combined.
- 6
In a separate bowl, whip the 200ml of cream until soft peaks form, then gently fold it into the chocolate mixture until smooth.
- 7
Spread the filling evenly over the prepared base and smooth the top. Place in the fridge for at least 4 hours.
- 8
For the ganache, heat the remaining 100ml of cream until just simmering. Pour over 100g of finely chopped chocolate. Let it sit for a minute, then stir until glossy and smooth.
- 9
Spread the ganache over the chilled cheesecake and return to the fridge for another hour to set.
- 10
Finish by piping swirls of whipped cream around the edges and topping with chocolate shavings before serving.
Tips
Make sure your cream cheese is at room temperature before you start so the filling stays smooth. You can store this cheesecake in the fridge for up to three days, and it is best served chilled straight from the refrigerator for the cleanest slices.
