Fajita bowls are a staple in my house because they come together so quickly. Using ground beef instead of steak makes the meal much more affordable, and you get all the same great flavor without needing to worry about marinating the meat beforehand.

I love making a big batch of jasmine rice at the start of the week so assembly is a breeze. If you are in a rush, just toss your peppers and onions into the skillet while the beef browns to get everything done at the same time.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup frozen or canned corn
  • 2 cups cooked jasmine rice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 lime, juiced
  • 1 avocado, sliced
  • Salt and pepper to taste

8Instructions

  1. 1

Heat the olive oil in a large skillet over medium high heat.

  2. 2

Add the sliced peppers and onions to the skillet. Cook them for about five minutes until they are soft and slightly charred.

  3. 3

Add the ground beef to the skillet. Break it up with a wooden spoon as it cooks until it is fully browned.

  4. 4

Stir in the chili powder, cumin, garlic powder, salt, and pepper. Cook for another minute to let the spices toast.

  5. 5

Add the corn to the pan and cook for two minutes until it is warm.

  6. 6

Remove the skillet from the heat and stir in the fresh lime juice.

  7. 7

Divide the cooked rice into bowls and top each serving with the beef and vegetable mixture.

  8. 8

Finish each bowl with fresh avocado slices before serving.

Tips

Store the beef mixture and the rice in separate airtight containers in the fridge for up to three days. Save the avocado for the very last minute so it stays fresh and does not turn brown. You can add a dollop of sour cream or fresh cilantro if you want extra flavor.
