Chicken Pomodoro is one of my go to meals when I want something that tastes like it came from a nice restaurant but takes very little effort in my own kitchen. The chicken stays nice and juicy under a light breading, and the sauce is perfectly balanced with garlic and Parmesan cheese.

My biggest tip for this recipe is to use the best canned tomatoes you can find, as they make all the difference in the sauce. If you want to keep things simple, serve this right out of the skillet with some crusty bread to soak up all that delicious liquid.

Ingredients

  • 2 chicken breasts, pounded thin
  • 1/2 cup all purpose flour
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 can crushed tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

6Instructions

  1. 1

Mix the flour, breadcrumbs, and Parmesan on a flat plate. Season the chicken with salt and pepper then dredge each piece in the mixture until well coated.

  2. 2

Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 4 minutes on each side until golden and cooked through. Remove the chicken from the pan and set aside.

  3. 3

Add the minced garlic to the same skillet and cook for about one minute until it smells great.

  4. 4

Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let the wine simmer for 2 minutes to reduce slightly.

  5. 5

Stir in the crushed tomatoes and let the sauce simmer for 5 minutes.

  6. 6

Place the chicken back into the pan with the sauce. Top with fresh basil and serve warm.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this over a bed of angel hair pasta or zucchini noodles if you prefer a lighter meal.
