Simple Roast Chicken with Twice Baked Potatoes
A cozy, classic Sunday dinner featuring perfectly golden roast chicken and creamy twice baked potatoes.
enzo81.xyzThere is something so comforting about a slow roasted chicken filling the kitchen with its aroma on a Sunday. It is the perfect centerpiece for a family meal and leaves you with enough leftovers to make quick lunches throughout the week.
The twice baked potatoes are a family favorite because they are so creamy and satisfying. I love to prep them ahead of time so the final bake is quick and easy when I am ready to serve.
Ingredients
- 1 whole roasting chicken
- 3 tablespoons olive oil
- 1 tablespoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large russet potatoes
- 1/4 cup sour cream
- 1/4 cup shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons chopped chives
7Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Rub the chicken all over with olive oil and season thoroughly with thyme, salt, and pepper.
- 3
Place the chicken in a roasting pan and bake for about 75 minutes or until the juices run clear and the skin is golden brown.
- 4
While the chicken roasts, bake the potatoes in the oven until tender, about 45 to 60 minutes.
- 5
Slice the cooked potatoes in half lengthwise and scoop the inside into a bowl, leaving a thin layer of potato in the skins.
- 6
Mash the potato flesh with sour cream, butter, cheese, and chives, then spoon the mixture back into the skins.
- 7
Place the stuffed potatoes into the oven alongside the chicken for the last 15 minutes of roasting until the cheese is melted and bubbly.
Tips
Store any leftover chicken in an airtight container in the fridge for up to three days. You can reheat the potatoes in the oven at 350 degrees until warmed through. If you have extra chicken, shred it to add to pasta or salads later in the week.
