There is something so comforting about a warm quiche in the morning. This version skips the heavy crust to focus on the lovely flavor of roasted butternut squash and crispy salty bacon. It is a hearty way to start your day and feels special enough for a holiday brunch.

Since this recipe is crustless, it comes together much faster than a traditional pie. It is excellent for meal prep because you can slice it up and keep it in the fridge for a quick grab and go breakfast throughout the work week.

Ingredients

  • 2 cups butternut squash, peeled and cubed into small pieces
  • 6 slices bacon, chopped
  • 2 cups fresh baby spinach, roughly chopped
  • 6 large eggs
  • 1 cup whole milk or half and half
  • 1 cup shredded Gruyere or Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

9Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Toss the cubed butternut squash with a little oil and roast on a baking sheet for 20 minutes until tender.

  3. 3

While the squash roasts, cook the chopped bacon in a skillet until it is nice and crispy. Drain the fat and set the bacon aside.

  4. 4

Lower the oven temperature to 350 degrees Fahrenheit and lightly grease a 9 inch pie dish.

  5. 5

In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.

  6. 6

Stir in the roasted squash, cooked bacon, chopped spinach, and shredded cheese.

  7. 7

Pour the mixture into the prepared pie dish.

  8. 8

Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.

  9. 9

Let the quiche rest for 10 minutes before slicing and serving.

Tips

You can store leftovers in an airtight container in the fridge for up to four days. This quiche also freezes beautifully, so just wrap individual slices in plastic wrap and foil before putting them in the freezer. Reheat a slice in the microwave for a minute or two when you are ready to eat.
