I love cinnamon rolls, but I do not always have the time to wait for dough to rise. These pancakes are my favorite way to get that warm spice and cream cheese frosting fix on a busy morning. They are soft, sweet, and smell amazing while they cook.

To keep things simple, I mix the cinnamon right into the batter rather than trying to swirl it in the pan. This keeps your griddle clean and ensures every single bite is packed with flavor. If you have kids, let them help drizzle the icing on top at the end.

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 4 oz softened cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk for icing

8Instructions

  1. 1

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

  2. 2

In a separate small bowl, beat the egg and then stir in the milk, melted butter, and vanilla.

  3. 3

Pour the wet ingredients into the dry ingredients and stir until just combined, though it is okay if a few small lumps remain.

  4. 4

Heat a lightly greased griddle or large skillet over medium heat.

  5. 5

Pour about a quarter cup of batter for each pancake and cook until bubbles form on the surface.

  6. 6

Flip carefully and cook until the other side is golden brown, usually about two minutes.

  7. 7

While the pancakes cook, beat the cream cheese, powdered sugar, and two tablespoons of milk together until smooth.

  8. 8

Stack the warm pancakes and drizzle or spread the cream cheese icing over the top before serving.

Tips

You can store any leftover pancakes in the fridge for up to two days and just pop them in the toaster to reheat. If the icing is too thick, add a tiny bit more milk until it reaches the perfect drizzling consistency.
