I always order huevos rancheros when I see them on a menu. After years of testing different ways to make them at home, this is the version I keep coming back to. The sauce is made with broiled tomatoes, onions, chiles, and garlic, with a bit of chipotle powder for a smoky kick and lime juice to brighten it all up.

There are a few parts to this recipe, but everything is straightforward. You can heat up your beans while the vegetables are under the broiler. Once the tortillas are crispy and the eggs are cooked to your liking, just pile on your favorite toppings and dig in.

Ingredients

  • 4 corn tortillas
  • 1 cup black beans or refried beans
  • 4 large eggs
  • 4 tomatoes, halved
  • 1/2 white onion, peeled and quartered
  • 1 jalapeno, halved and seeded
  • 2 cloves garlic, peeled
  • 1/2 teaspoon chipotle powder
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Optional toppings: crumbled cotija cheese, sliced avocado, fresh cilantro

6Instructions

  1. 1

Place the tomatoes, onion, jalapeno, and garlic on a baking sheet and broil for 8 to 10 minutes until charred.

  2. 2

Transfer the charred vegetables to a blender. Add the chipotle powder, lime juice, and a pinch of salt. Blend until smooth and set aside.

  3. 3

Warm the beans in a small saucepan over low heat.

  4. 4

Heat the vegetable oil in a skillet over medium heat. Fry the corn tortillas one by one until they are lightly crisped, then remove and drain on paper towels.

  5. 5

Use the same skillet to fry your eggs to your preferred level of doneness.

  6. 6

To serve, spread the warm beans onto the tortillas, top each with an egg, and spoon the smoky tomato sauce over everything. Finish with your choice of toppings.

Tips

If you have leftovers, store the sauce in an airtight container in the fridge for up to three days. It also tastes great over grilled chicken or stirred into rice. Keep your tortillas crispy by serving immediately after frying.
