Creamy Homemade Chicken Alfredo Pasta
A comforting pasta dish featuring tender chicken and a rich, velvety Parmesan sauce that tastes better than anything from a restaurant.
enzo81.xyzThere is something truly special about a big bowl of creamy pasta after a long day. This Chicken Alfredo is a family favorite because it uses simple pantry staples to create a meal that feels fancy but is actually quite easy to whip up in your own kitchen.
My best tip for success is to use freshly grated Parmesan cheese if you have the time. It melts much more smoothly than the pre grated kind and makes the sauce feel extra silky. Don't be afraid to keep a little splash of the pasta water to loosen things up if the sauce gets too thick.
Ingredients
- 8 ounces fettuccine pasta
- 2 boneless skinless chicken breasts, sliced into strips
- 2 tablespoons olive oil
- 1/2 cup unsalted butter
- 2 cups heavy cream
- 1 1/2 cups freshly grated Parmesan cheese
- 1/2 cup grated Romano cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Fresh parsley for garnish
8Instructions
- 1
Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente.
- 2
While the water is heating, season your chicken strips with salt and pepper.
- 3
Heat the olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through. Remove the chicken from the pan and set it aside.
- 4
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about one minute until it smells fragrant.
- 5
Pour in the heavy cream and let it simmer gently for about three to five minutes until it thickens slightly.
- 6
Whisk in the Parmesan and Romano cheeses until the sauce is smooth and creamy.
- 7
Return the cooked chicken to the pan and toss in the cooked pasta. Stir everything together until the noodles are well coated.
- 8
Taste and add more salt or pepper if needed, then sprinkle with fresh parsley before serving.
Tips
Store any leftovers in an airtight container in the fridge for up to two days. When reheating, add a small splash of milk or water to the pan to bring the creamy sauce back to life over low heat.
