Honey walnut shrimp is a classic favorite because it balances crispy, golden fried shrimp with a rich and creamy sauce. The candied walnuts add a perfect crunch that makes every bite interesting. It is a wonderful treat for a special weeknight dinner.

My best advice is to fry the shrimp in small batches so the oil temperature stays consistent. This ensures that your shrimp stay light and crispy instead of getting soggy. Serve it immediately while the coating is at its best.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup walnut halves
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/2 cup cornstarch
  • 1 egg white
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon sweetened condensed milk
  • 1 teaspoon lemon juice
  • Oil for frying

6Instructions

  1. 1

Combine the sugar and water in a small pan over medium heat. Add the walnuts and cook until the liquid turns into a syrup, about 5 minutes. Remove the walnuts and let them cool on parchment paper.

  2. 2

In a small bowl, whisk together the mayonnaise, honey, condensed milk, and lemon juice to create the sauce. Set this aside.

  3. 3

Pat the shrimp dry with paper towels. In a medium bowl, toss the shrimp with the egg white and then coat them thoroughly in the cornstarch.

  4. 4

Heat about an inch of oil in a large pan over medium high heat. Fry the shrimp in small batches for about 2 minutes per side until they are golden and cooked through.

  5. 5

Drain the cooked shrimp on paper towels briefly, then transfer them to a large bowl. Pour the creamy sauce over the hot shrimp and toss gently to coat.

  6. 6

Stir in the candied walnuts and serve immediately with steamed white rice.

Tips

For the best texture, toss the shrimp in the sauce right before you are ready to eat. If you have leftovers, store the sauce and the crispy shrimp in separate containers in the fridge to keep them from getting soft.
