There is something so comforting about a warm blueberry muffin in the morning. These muffins have a beautiful golden exterior and a tender, moist middle that is packed with juicy berries. Best of all, you do not need any special gums or starches to get the perfect texture.

I spent a lot of time adjusting the ratios to get these just right since almond flour behaves differently than wheat flour. They are quite wholesome and light, making them a perfect treat that you can feel good about eating any day of the week.

Ingredients

  • 2 cups blanched almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 3 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

8Instructions

  1. 1

Preheat your oven to 350 degrees F and line a muffin tin with paper liners.

  2. 2

In a large bowl, whisk together the almond flour, baking soda, and salt.

  3. 3

In a separate bowl, whisk the eggs, honey, melted coconut oil, and vanilla until smooth.

  4. 4

Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. 5

Gently fold in the fresh blueberries using a spatula.

  6. 6

Divide the batter evenly among the muffin liners.

  7. 7

Bake for 20 to 25 minutes until the tops are golden brown and a toothpick comes out clean.

  8. 8

Let the muffins cool in the pan for 10 minutes before moving them to a wire rack.

Tips

Store your muffins in an airtight container in the fridge for up to 5 days to keep them fresh. You can also freeze them for up to 3 months and simply reheat them in the oven or microwave when you want a quick breakfast.
