There is nothing quite like the smell of cinnamon and fresh apples baking in the oven on a cool fall afternoon. This simple apple cake is a favorite in our house because it is incredibly moist, light, and comes together with ingredients you likely already have in your pantry.

The secret is the generous cinnamon sugar topping that creates a wonderful crunch in every bite. It is a fantastic treat for a weekend brunch or a cozy snack with a hot cup of tea or coffee.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 large egg
  • 2 cups fresh apples, peeled and chopped
  • 1/4 cup brown sugar mixed with 1 teaspoon cinnamon for the topping

8Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a 9 inch round cake pan.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

  3. 3

Add the softened butter, milk, and egg to the dry ingredients, beating until the batter is smooth and well combined.

  4. 4

Gently fold in the chopped apples until they are evenly distributed throughout the batter.

  5. 5

Pour the batter into your prepared pan and smooth the top with a spatula.

  6. 6

Sprinkle the brown sugar and cinnamon mixture evenly over the top of the cake.

  7. 7

Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

Let the cake cool in the pan for at least 10 minutes before serving warm.

Tips

Store any leftovers in an airtight container at room temperature for up to two days. If you want to serve it the next day, a quick ten seconds in the microwave makes it taste freshly baked all over again.
