There is nothing quite like the smell of spiced bread baking in the oven during the cooler months. This butternut squash bread is my favorite way to use up winter squash, and the brown butter base adds a rich, nutty flavor that makes every slice taste special.

The cinnamon walnut streusel on top adds a perfect crunch that contrasts beautifully with the soft, moist crumb of the bread. It is a wonderful treat to share with friends over coffee or to keep on the counter for a quick morning snack.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup butter, browned
  • 1 cup mashed cooked butternut squash
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup brown sugar for streusel
  • 1 teaspoon cinnamon for streusel
  • 2 tablespoons cold butter for streusel

9Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.

  2. 2

In a small saucepan over medium heat, melt the butter until it turns golden brown and smells nutty, then set it aside to cool slightly.

  3. 3

In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and nutmeg.

  4. 4

In a large bowl, mix the mashed squash, maple syrup, brown sugar, eggs, vanilla, and the browned butter.

  5. 5

Gently stir the dry ingredients into the wet mixture until just combined, then fold in half of the chopped walnuts.

  6. 6

Pour the batter into your prepared loaf pan.

  7. 7

In a small bowl, rub the cold butter, remaining brown sugar, cinnamon, and remaining walnuts together with your fingers until crumbly, then sprinkle this over the top of the batter.

  8. 8

Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

  9. 9

Let the bread cool in the pan for 10 minutes before moving it to a wire rack to cool completely.

Tips

This bread stays moist for days if wrapped tightly in plastic wrap or kept in an airtight container at room temperature. You can also toast a slice and add a tiny bit of butter for a warm breakfast treat.
