I love making this bread because it is the most stress free way to use your sourdough starter. You do not need a Dutch oven or any special skills, just a basic baking pan and a little bit of time for the dough to rise.

The result is a beautiful golden loaf with those classic dimples that catch all the olive oil and salt. It is wonderful for making sandwiches or just serving as a side for a cozy pasta dinner.

Ingredients

  • 1/4 cup active sourdough starter
  • 1 1/3 cups water
  • 1 tablespoon olive oil, plus more for the pan
  • 1 1/2 teaspoons fine sea salt
  • 3 cups all purpose flour
  • Flaky sea salt for topping

10Instructions

  1. 1

In a large bowl, whisk together your active sourdough starter, water, olive oil, and fine sea salt until the starter is mostly dissolved.

  2. 2

Add the all purpose flour to the bowl and stir with a spoon or your hands until a shaggy dough forms and no dry spots remain.

  3. 3

Cover the bowl with a clean cloth and let the dough rest for one hour at room temperature.

  4. 4

After the rest, reach into the bowl and mix the dough by hand for about two minutes, pulling the edges toward the center until it feels slightly more cohesive.

  5. 5

Coat an 8x8 inch baking dish generously with olive oil and transfer the dough into the pan.

  6. 6

Cover the pan and let the dough rise at room temperature for 10 to 12 hours, or until it has filled the pan and looks very bubbly.

  7. 7

Preheat your oven to 400 degrees Fahrenheit.

  8. 8

Drizzle a little extra olive oil over the top of the dough and use your fingertips to press deep dimples all over the surface.

  9. 9

Sprinkle the top with flaky sea salt and bake for 35 to 40 minutes until the crust is golden brown.

  10. 10

Let the focaccia cool in the pan for five minutes, then move it to a wire rack so the bottom stays crispy.

Tips

To keep the bread fresh, store it in a sealed container at room temperature for up to two days. You can also freeze slices for up to three months and reheat them in the oven to bring back that crunch.
