There is nothing quite like the smell of fresh bagels baking in your own oven. This recipe is a favorite in my house because it uses your sourdough starter to create that classic tangy flavor and chewy texture everyone loves.

You can easily fit this into your schedule by making them all in one day or letting the dough rest in the fridge overnight. Just make sure your starter is nice and active before you begin for the best rise.

Ingredients

  • 100 grams active sourdough starter
  • 250 grams warm water
  • 500 grams bread flour
  • 30 grams sugar
  • 10 grams salt
  • 1 liter water for boiling
  • 1 tablespoon barley malt syrup or honey for the boiling water

9Instructions

  1. 1

Mix the starter, warm water, flour, sugar, and salt in a large bowl until a shaggy dough forms.

  2. 2

Knead the dough on a floured surface for about 10 minutes until it feels smooth and elastic.

  3. 3

Place the dough in a greased bowl, cover it, and let it rise in a warm spot for about 4 to 6 hours until it doubles in size.

  4. 4

Divide the dough into 8 equal pieces and roll them into smooth balls.

  5. 5

Poke a hole through the center of each ball and gently stretch them into bagel shapes.

  6. 6

Let the shaped bagels rest on a tray for 30 minutes.

  7. 7

Bring a large pot of water to a boil and stir in the barley malt syrup or honey.

  8. 8

Boil each bagel for about 1 minute per side and place them on a parchment lined baking sheet.

  9. 9

Bake the bagels at 425 degrees Fahrenheit for 20 to 25 minutes until they are golden brown.

Tips

Store these bagels in an airtight container at room temperature for up to two days. For longer storage, slice them and keep them in the freezer so you can pop them directly into the toaster whenever you need a quick breakfast.
