There is nothing quite like a warm slice of cornbread next to a bowl of chili on a chilly evening. This version is my new favorite because it has those wonderful crispy edges and a deep, buttery flavor that everyone at the table will love.

Using almond flour instead of wheat flour keeps this recipe gluten free while adding a lovely moisture. You will not taste the almonds at all because the cornmeal provides such a bold and classic flavor. It is a simple, wholesome treat that feels like a hug on a plate.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup almond flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 cup whole milk

7Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and grease a small square baking dish.

  2. 2

In a large bowl, whisk together the cornmeal, almond flour, baking powder, and salt.

  3. 3

In a separate bowl, beat the eggs and then stir in the melted butter, honey, and milk.

  4. 4

Pour the wet ingredients into the dry mixture and stir until just combined.

  5. 5

Spread the batter into your prepared baking dish.

  6. 6

Bake for 20 to 25 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

  7. 7

Let the bread cool in the pan for 10 minutes before slicing.

Tips

Serve this bread warm with a generous slab of salted butter or a drizzle of extra honey. You can store leftovers in an airtight container at room temperature for two days or keep them in the fridge to stay fresh for up to five days.
