Have you ever wondered why so many baking recipes ask for room temperature butter or eggs? It is not just a suggestion, it actually helps everything mix together into a smooth emulsion so your treats turn out light and fluffy. Cold ingredients can make your batter clump up or prevent it from rising properly in the oven.

The good news is that you do not need to wait for hours to get started. I have a few quick ways to warm things up safely without melting your butter or cooking your eggs. Here is how I get my kitchen ready for a great day of baking.

Ingredients

  • 1 cup unsalted butter
  • 2 large eggs
  • 1 cup whole milk or buttermilk
  • 1/2 cup sour cream or plain yogurt

6Instructions

  1. 1

Take your butter out of the fridge about an hour before you plan to bake and cut it into small cubes to help it soften faster.

  2. 2

Check the butter by pressing it with your thumb, it should be cool to the touch but indent easily without your finger sliding through.

  3. 3

For eggs, place them in a bowl of warm water for about 5 to 10 minutes if you forgot to take them out earlier.

  4. 4

Measure out your milk or liquid dairy and let it sit on the counter for 30 minutes, or microwave it in short 5 second bursts until the chill is gone.

  5. 5

Stir your sour cream or yogurt in its container and let it sit at room temperature for about 20 minutes before adding it to your mix.

  6. 6

Avoid using high heat or melting the butter completely, because liquid fat behaves very differently than softened fat in a recipe.

Tips

If you are in a real hurry, you can grate cold butter with a cheese grater to make it soften in just a few minutes. Always keep an eye on things so they do not get too warm, especially in a hot kitchen during the summer.
