There is something so special about waking up to a bubbly dough that is ready to be baked into a golden, crispy loaf. This focaccia is my favorite because you do not have to worry about kneading or complicated techniques, you just mix it in one bowl and let the refrigerator do the hard work while you sleep.

My top tip for success is to use a high quality olive oil for the pan. Since the bread fries in the oil while it bakes, the better the oil tastes, the better your final loaf will be. You can top it with rosemary or sea salt flakes to keep things classic.

Ingredients

  • 4 cups all purpose flour
  • 2 teaspoons salt
  • 2 teaspoons instant yeast
  • 2 cups lukewarm water
  • 4 tablespoons extra virgin olive oil for the pan
  • Extra olive oil for drizzling
  • Flaky sea salt for topping

8Instructions

  1. 1

In a large mixing bowl, combine the flour, salt, yeast, and water. Mix until no dry flour remains and a sticky dough forms.

  2. 2

Cover the bowl tightly and place it in the refrigerator for at least 12 hours or up to 24 hours.

  3. 3

Pour about 2 tablespoons of olive oil into a 9x13 inch baking pan and use your hands to coat the bottom and sides.

  4. 4

Transfer the dough to the prepared pan. Let it rest, covered, at room temperature for about 2 hours until it fills the pan.

  5. 5

Preheat your oven to 425 degrees Fahrenheit.

  6. 6

Drizzle the top of the dough with a little more olive oil. Use your fingers to poke deep dimples all over the dough.

  7. 7

Sprinkle with flaky sea salt and bake for 20 to 25 minutes until the top is golden brown and crispy.

  8. 8

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.

Tips

Store leftover bread in an airtight container at room temperature for up to two days. If you want to refresh it, pop it in a toaster oven for a few minutes to bring back that signature crisp crust. Serve it alongside a big bowl of soup or slice it thin for sandwiches.
