Easy Upside Down Pear Tart
This elegant French style pear tart features caramelized fruit and a perfectly crisp puff pastry crust.
enzo81.xyzThere is something truly special about a dessert that looks like it came from a professional bakery but is actually simple to pull together at home. This upside down pear tart uses firm pears and buttery puff pastry to create a beautiful autumn treat that is sure to impress your guests.
The secret to this recipe is baking it upside down. By layering the pears, butter, and sugar on the bottom and placing the pastry on top, you ensure the crust stays light and crispy while the fruit creates a rich, caramelized topping. It is my favorite way to celebrate pear season.
Ingredients
- 4 to 6 tablespoons honey
- 6 tablespoons unsalted butter, sliced into 6 even pieces
- 2 tablespoons light brown sugar
- 1 1/2 teaspoons ground cinnamon, plus extra for serving
- 1/2 to 1 teaspoon flaky sea salt or kosher salt
- 3 to 5 firm Anjou or Bosc pears, sliced 1/8 inch thick
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten with 1 teaspoon water
8Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
- 2
Create 6 evenly spaced puddles of honey on the parchment paper, arranging them in 2 rows of 3.
- 3
Place a pat of butter in the center of each honey puddle, then sprinkle each one with a bit of brown sugar, cinnamon, and salt.
- 4
Fan the pear slices over the butter pats to create 3 columns, tucking the slices closely together so they overlap and cover the butter completely.
- 5
Carefully lay the sheet of puff pastry over the arranged pears and trim the edges if necessary to fit your layout.
- 6
Brush the top of the pastry with your egg wash.
- 7
Bake for 20 to 25 minutes until the pastry is puffed and deep golden brown.
- 8
Remove from the oven and let it sit for a moment before carefully flipping the entire tart over onto a serving platter so the caramelized pears are on top.
Tips
Serve this tart warm with a light dusting of extra cinnamon. If you have leftovers, keep them in an airtight container in the fridge and pop them in the oven for a few minutes to bring back that signature crunch.
