This chocolate almond cake is my new go to when I need a treat that is both indulgent and wholesome. Because it uses almond flour, the texture is incredibly moist and it is naturally gluten free, making it a great option for guests with dietary needs.

I love how easy this is to put together by hand in just one bowl. It reminds me of a classic Italian torta Caprese, and it is honestly hard to mess up. Feel free to keep it simple with a dusting of powdered sugar or dress it up with your favorite frosting for a special occasion.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 cups almond flour
  • Optional sliced almonds for topping

7Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and grease an 8 inch round cake pan.

  2. 2

In a large bowl, whisk the melted butter and cocoa powder together until smooth.

  3. 3

Add the salt, vanilla extract, eggs, and sugar to the bowl. Whisk everything until well combined.

  4. 4

Fold in the almond flour using a spatula until the batter is uniform.

  5. 5

Pour the batter into your prepared cake pan and smooth the top.

  6. 6

Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

Let the cake cool in the pan for at least 15 minutes before transferring it to a wire rack.

Tips

Serve this cake at room temperature with a dollop of whipped cream or fresh berries. You can store leftovers in an airtight container at room temperature for up to three days. It also freezes beautifully if you want to save a few slices for later.
