If you love chicken parmesan but want something a bit different for dinner, these meatballs are the perfect choice. They are light, juicy, and filled with fresh spinach, making them a great way to sneak some greens into your meal while keeping all that classic Italian flavor we love.

I like to serve these meatballs straight from the oven when the cheese is nice and bubbly. They are wonderful on their own, but they really shine when you serve them with a side of marinara sauce or over a big bowl of warm pasta.

Ingredients

  • 1 pound ground chicken
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup shredded mozzarella cheese

6Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and lightly grease a large baking sheet.

  2. 2

In a large mixing bowl, combine the ground chicken, chopped spinach, breadcrumbs, parmesan, egg, garlic, and spices.

  3. 3

Mix everything together gently with your hands until just combined, then form the mixture into equal sized meatballs.

  4. 4

Place the meatballs onto the prepared baking sheet and drizzle them with the melted butter.

  5. 5

Bake for 15 to 20 minutes until they are golden brown and cooked through.

  6. 6

Remove the tray from the oven, sprinkle the mozzarella over the top, and pop them back in for two minutes until the cheese is melted and bubbly.

Tips

Serve these meatballs with your favorite marinara sauce for dipping or toss them with pasta. You can store any leftovers in an airtight container in the fridge for up to three days.
