This recipe is my go to for busy nights when I want a hearty meal without the mountain of dishes. The magic is in the self saucing method where the stock and flour thicken right in the oven as everything cooks, creating a delicious gravy that pulls all the flavors together.

It is an unconventional way to cook, but it works perfectly every time. By using bone in chicken thighs, the meat stays tender and adds so much richness to the sauce. Just toss everything in, pop it in the oven, and you have a full dinner ready to serve.

Ingredients

  • 1 kg bone in chicken thighs
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 500g potatoes, cut into chunks
  • 3 carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cups beef stock
  • 2 tbsp all purpose flour
  • 1 tsp dark soy sauce
  • 1/2 tsp black pepper
  • 1 cup frozen peas

8Instructions

  1. 1

    Preheat your oven to 200C.

  2. 2

In a large bowl, toss the potatoes, carrots, and onion with a drizzle of oil, salt, and pepper, then transfer them to a large roasting pan.

  3. 3

In the same bowl, coat the chicken thighs with olive oil and the seasoning mixture of paprika, garlic powder, onion powder, and thyme.

  4. 4

Arrange the chicken pieces on top of the vegetables in the pan, skin side up.

  5. 5

Whisk the beef stock, flour, dark soy sauce, and black pepper together in a jug until smooth.

  6. 6

Pour the liquid mixture carefully into the roasting pan around the chicken.

  7. 7

Bake for 45 to 50 minutes until the chicken is cooked through and golden and the gravy has thickened.

  8. 8

Remove from the oven, stir the frozen peas into the hot gravy, and let it stand for 5 minutes before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a small splash of water to the gravy if it has thickened too much in the fridge.
