One Pot Spiced Chicken with Toasted Couscous
This simple, comforting one pot meal brings together seasoned chicken and fluffy toasted couscous for an easy weeknight dinner.
enzo81.xyzWhen the week gets busy, I always turn to this spiced chicken dish because it is so incredibly simple to put together. Everything cooks in a single pan, which means you spend less time cleaning and more time enjoying your dinner with the family.
The warm spices make the kitchen smell amazing while it simmers. I love how the couscous absorbs all those savory juices from the chicken, creating a texture that is both tender and satisfying.
Ingredients
- 2 tablespoons olive oil
- 1 pound chicken breast, cut into bite sized pieces
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup couscous
- 1 1/2 cups chicken broth
- Salt and black pepper to taste
- Fresh parsley for garnish
8Instructions
- 1
Heat the olive oil in a large skillet or pot over medium heat.
- 2
Add the chicken pieces and cook until browned on all sides, then remove them from the pan and set aside.
- 3
Add the onion and garlic to the same pan and cook until they are soft and fragrant.
- 4
Stir in the dry couscous and toast it for about two minutes, stirring often until it turns a light golden color.
- 5
Return the chicken to the pan and stir in the cumin, coriander, turmeric, salt, and pepper.
- 6
Pour in the chicken broth and bring everything to a gentle simmer.
- 7
Cover the pan, remove it from the heat, and let it sit for five to seven minutes until the liquid is fully absorbed.
- 8
Fluff the couscous with a fork, sprinkle with fresh parsley, and serve immediately.
Tips
You can store leftovers in an airtight container in the fridge for up to three days. If the couscous seems a little dry after reheating, just add a tiny splash of water or broth to bring back the moisture.
