There is nothing better than coming home to a house that smells like a delicious takeout meal. This honey garlic chicken is one of my favorite go to dinners because the slow cooker does all the hard work for me while I handle my daily chores.

My top tip is to use chicken thighs instead of breasts if you can. They stay much juicier and tender when they cook for several hours, which makes the meat perfect for shredding at the end of the day.

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon cornstarch
  • 1 tablespoon water

7Instructions

  1. 1

Place the chicken thighs into your slow cooker in an even layer.

  2. 2

In a small bowl, whisk together the honey, soy sauce, ketchup, garlic, and oregano until smooth.

  3. 3

Pour the sauce mixture over the chicken, making sure each piece is well coated.

  4. 4

Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is cooked through.

  5. 5

Remove the chicken from the pot and shred it using two forks.

  6. 6

Mix the cornstarch and water in a small cup to make a slurry, then stir it into the liquid remaining in the slow cooker.

  7. 7

Return the shredded chicken to the pot and toss it with the thickened sauce before serving.

Tips

Serve this over a bed of warm steamed rice with a side of broccoli to soak up all that extra sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days, as they make a fantastic lunch the next day.
