Southern Style Tomato Pie
A savory, golden pie packed with garden fresh tomatoes, melted cheese, and fresh herbs.
enzo81.xyzThere is nothing quite like a slice of tomato pie when summer garden tomatoes are at their peak. It is one of those classic recipes that feels fancy enough for guests but works just as well for a casual family dinner on the porch.
My secret to success is taking the time to salt your tomatoes before assembling the pie. This simple step removes excess liquid so you get a perfect, sliceable filling instead of a soggy crust. It is such a rewarding way to enjoy the season.
Ingredients
- 1 9 inch pie crust
- 4 large tomatoes, thinly sliced
- 1/2 cup diced onion
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh herbs, chopped
- Salt and black pepper to taste
10Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit.
- 2
Press the pie crust into a 9 inch pie plate. Line it with parchment paper and pie weights, then bake for 25 minutes until lightly browned.
- 3
While the crust bakes, place the tomato slices on paper towels. Sprinkle them with salt and let them sit for 20 minutes to drain moisture, then pat them dry.
- 4
Scatter the diced onion over the bottom of your prebaked crust.
- 5
Layer the tomato slices into the crust and sprinkle them with your fresh herbs.
- 6
In a mixing bowl, stir together the mozzarella, cheddar, mayonnaise, and green onions.
- 7
Spread the cheese mixture evenly over the top of the tomatoes.
- 8
Sprinkle the Parmesan cheese and a pinch of black pepper over the top.
- 9
Bake for 30 to 40 minutes until the top is bubbly and golden brown.
- 10
Let the pie cool for at least 15 to 20 minutes before serving so the filling can set.
Tips
Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can serve this warm or at room temperature. If you want an extra savory kick, feel free to add some crumbled cooked bacon into your cheese mixture before baking.
