When I am looking for something special for a weeknight dinner, this eggplant bolognese is my go to choice. It is a wonderful way to use up fresh eggplant, and the texture is surprisingly meaty and delicious. It is light enough for a warm evening but satisfying enough to keep everyone happy at the table.

I love this recipe because it all happens in just one pot, which makes cleanup so much faster. My best tip is to dice the eggplant into very small, uniform pieces so they melt into the sauce perfectly. It really helps create that rich and creamy consistency we all love in a good pasta sauce.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium eggplant, peeled and finely diced
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes (28 ounces)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped
  • 1 pound of your favorite pasta

7Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the diced eggplant and onion to the pot and cook until they are soft and slightly browned, which takes about 8 to 10 minutes.

  3. 3

Stir in the minced garlic, tomato paste, oregano, and red pepper flakes, cooking for another minute until fragrant.

  4. 4

Pour in the crushed tomatoes and season with salt and pepper.

  5. 5

Reduce the heat to low, cover the pot, and let the sauce simmer for 20 minutes so the flavors meld together.

  6. 6

While the sauce simmers, cook your pasta in a separate pot of boiling salted water according to the package directions.

  7. 7

Drain the pasta and toss it directly into the sauce pot, then stir in the fresh basil before serving.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this with a sprinkle of parmesan cheese or nutritional yeast to add a savory finish. It pairs beautifully with a side of crusty bread to soak up the extra sauce.
