Creamy Marry Me Tofu
This vegan spin on the famous creamy tomato dish features crispy tofu cubes in a rich, flavorful sun dried tomato sauce.
enzo81.xyzIf you are looking for a satisfying plant based dinner, this recipe is a total winner. It takes the big, bold flavors of the viral marry me chicken dish and swaps in extra firm tofu for a delicious vegan twist that even meat eaters will love.
The secret is the creamy sauce made with full fat coconut milk, garlic, and sun dried tomatoes. My best tip is to press your tofu thoroughly before cooking, as this ensures those golden, crispy edges we all want.
Ingredients
- 1 block extra firm tofu
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 4 tablespoons canola oil, divided
- 1/2 cup oil packed sun dried tomatoes, julienne cut
- 1 tablespoon tomato paste
- 4 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- 1/2 teaspoon Cajun seasoning
- 1 cup full fat coconut milk
- 2 cups baby spinach
- Fresh basil for garnish
8Instructions
- 1
Wrap the tofu in a clean towel and place something heavy on top for 30 minutes to press out excess moisture.
- 2
Cut the tofu into 3/4 inch cubes and toss them in a bowl with the cornstarch and salt until coated.
- 3
Heat 2 tablespoons of oil in a large skillet over medium high heat. Add half of the tofu in a single layer and cook until golden brown on all sides, about 6 to 8 minutes. Remove the tofu and set it aside.
- 4
Add 1 tablespoon of oil to the pan and repeat the process with the remaining tofu. Remove and set aside.
- 5
Lower the heat to medium low and add the final tablespoon of oil. Stir in the sun dried tomatoes, tomato paste, and garlic. Cook for 30 seconds while scraping up any browned bits.
- 6
Add the Italian and Cajun seasonings, then pour in the coconut milk. Stir well and simmer for about 5 minutes until the sauce thickens.
- 7
Stir in the spinach a handful at a time until it wilts completely.
- 8
Add the crispy tofu back into the skillet and fold gently to coat. Serve immediately with fresh basil.
Tips
This dish is best served immediately to keep the tofu crispy. If you have leftovers, store the sauce and tofu separately from any rice or pasta so nothing gets soggy. Reheat gently on the stove rather than the microwave.
