Everything bakes together in one casserole dish, which means minimal cleanup and a delicious meal on the table in no time. It is a fantastic way to feed the whole family without having to stand over a stove.
Ingredients
- 1 1/2 cups long grain white rice
- 2 1/2 cups chicken broth
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 3 teaspoons fresh ginger, minced
- 2 teaspoons sesame oil
- 1 teaspoon rice vinegar
- 2 cups chopped bok choy
- 1 cup shredded carrots
- 20 to 24 frozen potstickers
- Optional: green onions and sesame seeds for garnish
7Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit and lightly grease a 9x13 inch baking dish with cooking spray.
- 2
In the baking dish, stir together the rice, chicken broth, soy sauce, garlic, ginger, sesame oil, and rice vinegar until well combined.
- 3
Layer the chopped bok choy and shredded carrots evenly over the rice mixture.
- 4
Arrange the frozen potstickers on top of the vegetables in a single layer.
- 5
Cover the dish tightly with aluminum foil and bake for 45 minutes.
- 6
Carefully remove the foil and check that the rice is tender and the liquid has been absorbed. If the rice needs more time, cover it back up and bake for a few extra minutes.
- 7
Drizzle your favorite dipping sauce over the top, garnish with green onions and sesame seeds, and serve warm.
Tips
Store any leftovers in an airtight container in the refrigerator for up to 4 days. When reheating, add a small splash of water or broth to the dish and microwave until it is heated through, as this helps keep the rice from drying out.
