There is nothing quite like a big bowl of beef and noodles when the weather turns cool. This recipe relies on a simple slow simmer to get the beef perfectly tender, making it a great meal to prepare when you have a bit of time to let the kitchen smell amazing.

I love serving this on a quiet weeknight because it is hearty and satisfying. The egg noodles soak up all that savory broth, creating a meal that feels like a big hug in a bowl.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 12 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped

8Instructions

  1. 1

Pat the beef dry with paper towels and season it well with salt and pepper.

  2. 2

Heat the oil in a large pot or Dutch oven over medium high heat and sear the beef on all sides until browned.

  3. 3

Remove the beef, add the onion to the pot, and cook until softened.

  4. 4

Return the beef to the pot and add the broth, garlic, and thyme.

  5. 5

Cover and simmer on low heat for about 3 hours or until the beef pulls apart easily with a fork.

  6. 6

Remove the beef to a cutting board, shred it into bite sized pieces, and return it to the pot.

  7. 7

Stir in the egg noodles and cook for about 8 to 10 minutes until the noodles are tender.

  8. 8

Serve warm in bowls topped with fresh parsley.

Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. The noodles will soak up more broth as they sit, so you may want to add a splash of water or extra beef broth when reheating. This dish freezes well if you store it without the noodles and add fresh ones upon reheating.
