This creamy chicken pasta is one of my favorite go to meals when I want something satisfying without spending all night in the kitchen. It uses simple pantry staples to create a restaurant quality dinner that the whole family will ask for again and again.

My biggest tip is to grate your own Parmesan cheese instead of using the pre grated kind from a bottle. It melts much better into the sauce and gives you that smooth, luxurious texture we all love.

Ingredients

  • 1 pound penne or fettuccine pasta
  • 2 boneless skinless chicken breasts, sliced into bite sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

9Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente.

  2. 2

While the pasta cooks, heat the olive oil in a large skillet over medium high heat.

  3. 3

Season the chicken pieces with salt, pepper, and Italian seasoning, then add them to the skillet.

  4. 4

Cook the chicken until it is golden brown and cooked through, then remove it from the pan and set it aside.

  5. 5

In the same skillet, add the minced garlic and cook for about thirty seconds until it smells fragrant.

  6. 6

Pour in the heavy cream and let it simmer gently for two minutes.

  7. 7

Stir in the grated Parmesan cheese until the sauce is smooth and thick.

  8. 8

Add the cooked chicken and the drained pasta back into the pan and toss everything together until well coated.

  9. 9

Serve immediately with a little extra cheese and fresh parsley on top.

Tips

Store any leftovers in an airtight container in the fridge for up to three days. When reheating, add a tiny splash of water or cream to help the sauce come back to life. This dish is great served alongside some steamed broccoli or a simple green salad.
