Easy Cold Soba Noodles
A refreshing and quick noodle dish that is perfect for a light lunch or a busy weeknight dinner.
enzo81.xyzThere is nothing quite like a cold noodle dish when you want something fast, light, and satisfying. These soba noodles are one of my favorite go to recipes because they come together in just a few minutes and taste fantastic cold.
I love keeping this recipe simple so the clean flavors of the buckwheat noodles can really shine. You can easily toss in whatever fresh vegetables you have in your fridge to make this a more substantial meal for your family.
Ingredients
- 8 ounces dried soba noodles
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1 teaspoon honey or maple syrup
- 1 teaspoon freshly grated ginger
- 2 green onions, thinly sliced
- 1 tablespoon toasted sesame seeds
6Instructions
- 1
Bring a large pot of water to a boil and cook the soba noodles according to the package directions.
- 2
Drain the noodles and immediately rinse them under cold running water until they are completely cool, which helps remove excess starch.
- 3
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and grated ginger.
- 4
Place the cooled noodles in a serving bowl and pour the dressing over them.
- 5
Toss well to coat the noodles evenly.
- 6
Garnish with the sliced green onions and toasted sesame seeds before serving.
Tips
You can store any leftovers in an airtight container in the fridge for up to two days. If the noodles seem a bit dry after being chilled, just add a tiny splash of soy sauce or sesame oil before eating.
