There is something special about the smell of cinnamon and sugar wafting from the oven. These candied pecans remind me of the little bags of treats I used to buy at the Amish market when I was a kid. They are perfectly crispy and have just the right amount of sweetness.

My secret for that authentic flavor is adding a little bit of allspice along with the cinnamon. It gives the nuts a warm, deep flavor that really makes them stand out. These make a wonderful gift for friends or a lovely snack to keep in a jar on your counter.

Ingredients

  • 1 pound raw pecan halves
  • 1 large egg white
  • 1 tablespoon water
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon salt

8Instructions

  1. 1

Preheat your oven to 250 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a large bowl, whisk the egg white and water together until the mixture is very frothy.

  3. 3

Add the pecan halves to the bowl and toss them until they are completely coated in the egg white.

  4. 4

In a separate small bowl, whisk the granulated sugar, brown sugar, cinnamon, allspice, and salt.

  5. 5

Pour the sugar mixture over the pecans and stir until every nut is evenly coated.

  6. 6

Spread the pecans out in a single layer on your prepared baking sheet.

  7. 7

Bake for one hour, making sure to stir the nuts every 15 minutes to ensure they roast evenly.

  8. 8

Remove from the oven and let them cool completely on the baking sheet so the coating can harden and crisp up.

Tips

Store these in an airtight container at room temperature for up to two weeks. They are delicious when sprinkled over a fresh autumn salad or served alongside a cheese board for guests.
