There is nothing quite like a homemade pumpkin pie sitting on the holiday table. I love how the warm spices fill the house with a cozy scent while it bakes. It is the one treat my family asks for every single year.

To get that perfectly smooth filling, make sure your ingredients are at room temperature before you start mixing. If you have time, let the pie chill overnight in the fridge. This helps the flavors blend together and makes it much easier to get a clean slice.

Ingredients

  • 1 unbaked 9 inch pie crust
  • 15 ounces pumpkin puree
  • 3 large eggs
  • 1/2 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 12 ounces evaporated milk

9Instructions

  1. 1

Preheat your oven to 425 degrees Fahrenheit.

  2. 2

Roll out your pie dough and fit it into a 9 inch pie plate, then crimp the edges with your fingers or a fork.

  3. 3

In a large bowl, whisk the eggs and both types of sugar together until the mixture is smooth.

  4. 4

Stir in the pumpkin puree, cinnamon, ginger, cloves, and salt until everything is well combined.

  5. 5

Slowly pour in the evaporated milk while whisking gently so you do not create too many air bubbles.

  6. 6

Place the pie plate on a baking sheet to catch any spills and pour the filling into the crust.

  7. 7

Bake at 425 degrees for 15 minutes, then turn the oven heat down to 350 degrees.

  8. 8

Continue baking for another 35 to 40 minutes or until a knife inserted near the center comes out clean.

  9. 9

Let the pie cool completely on a wire rack for at least 2 hours before serving or chilling.

Tips

Store any leftovers in the refrigerator for up to four days. You can serve this with a big dollop of whipped cream or even a scoop of vanilla ice cream on the side for an extra treat.
