There is nothing quite like a big bowl of ramen to warm you up after a long day. This version comes together in just one pot, which makes cleanup a breeze for any busy home cook.

I love how the ginger and coconut milk blend together to create a rich base that tastes like you spent hours on it. Make sure to grate your ginger finely so every spoonful is packed with that zesty kick.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, thinly sliced
  • 2 large carrots, peeled and sliced into thin rounds
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can full fat coconut milk
  • 3 cups chicken broth
  • 2 packs instant ramen noodles, seasoning packets discarded
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

8Instructions

  1. 1

Heat the oil in a large pot over medium high heat.

  2. 2

Add the sliced chicken to the pot and cook until it is browned on all sides.

  3. 3

Stir in the carrots and ginger, cooking for about two minutes until fragrant.

  4. 4

Add the red curry paste and stir well to coat the chicken and vegetables.

  5. 5

Pour in the coconut milk and chicken broth, then bring the mixture to a gentle simmer.

  6. 6

Add the ramen noodles and cook for three minutes or until they are soft.

  7. 7

Stir in the soy sauce and lime juice, then remove from the heat.

  8. 8

Serve in bowls topped with fresh cilantro.

Tips

If you enjoy a bit more heat, feel free to add a drizzle of chili oil before serving. Store any leftovers in an airtight container in the fridge for up to two days, though the noodles will soak up most of the broth as they sit.
