Roasted Sweet Potato Curry
A warm and comforting vegetable curry that is perfect for chilly evenings.
enzo81.xyzSweet potatoes are such a staple in my kitchen when the weather starts to cool down. This curry is one of my favorite ways to use them because it feels like a big hug in a bowl. It is creamy, slightly spicy, and very filling.
If you want to save time, you can roast the potatoes ahead of time or even use leftovers from last night. Serving this over a bed of fluffy rice or with some warm flatbread makes it a complete meal that everyone will love.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 can coconut milk (14 ounces)
- 1 cup vegetable broth
- 2 cups fresh spinach
- 1 tablespoon lime juice
- Fresh cilantro for garnish
8Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit and toss the cubed sweet potatoes with olive oil and salt on a baking sheet.
- 2
Roast the potatoes for about 25 minutes until they are tender and slightly browned on the edges.
- 3
While the potatoes roast, heat a large pan over medium heat and sauté the onion until it is soft and translucent.
- 4
Stir in the garlic, ginger, and curry paste and cook for another two minutes until the mixture smells amazing.
- 5
Pour in the coconut milk and vegetable broth, then let the liquid come to a gentle simmer.
- 6
Add the roasted sweet potatoes to the pan and let everything cook together for five minutes so the flavors can blend.
- 7
Stir in the spinach until it just starts to wilt, then finish the dish with a squeeze of fresh lime juice.
- 8
Serve the curry hot with fresh cilantro sprinkled on top.
Tips
Store leftovers in an airtight container in the fridge for up to four days. This curry actually tastes even better the next day after the spices have had time to settle. You can add a handful of chickpeas if you want extra texture.
