When apple season hits, this cobbler is my go to recipe for a simple treat. It uses sourdough discard to help thicken the fruit juices, creating a rich and syrupy filling that pairs perfectly with the soft, buttery topping.

You can serve this as a sweet breakfast or a comforting dessert after dinner. I love topping mine with a generous scoop of cold vanilla ice cream while the cobbler is still warm from the oven.

Ingredients

  • 6 cups Granny Smith apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1/2 cup sourdough discard
  • 1 tablespoon apple pie spice
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract

7Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit.

  2. 2

In a large bowl, toss the sliced apples with the brown sugar, lemon juice, and apple pie spice.

  3. 3

Stir in the sourdough discard until the apples are well coated and transfer the mixture into a greased baking dish.

  4. 4

In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  5. 5

Add the melted butter and vanilla extract to the flour mixture, stirring gently until just combined. It is okay if there are a few dry spots of flour.

  6. 6

Drop spoonfuls of the topping over the apple mixture in the baking dish.

  7. 7

Bake for 35 to 40 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.

Tips

Store any leftovers in an airtight container in the refrigerator for up to 5 days. To reheat, warm individual portions in the oven at 350 degrees until the topping is crisp again. If you have extra, you can freeze the cobbler for up to 3 months and thaw it overnight in the fridge.
