Cowboy mushrooms are one of my favorite quick fixes when I want a side dish that tastes fancy but requires almost no effort. By using just two simple ingredients, you get a plate of juicy, savory mushrooms that pair perfectly with steak, chicken, or even a big scoop of mashed potatoes.

Since this recipe is so straightforward, the quality of your butter really shines through. If you like a little heat, make sure your cowboy butter has a pinch of cayenne or red pepper flakes, but you can easily leave them out if you prefer a milder taste.

Ingredients

  • 16 ounces small button mushrooms, cleaned and stems trimmed
  • 1/2 cup cowboy butter

5Instructions

  1. 1

Place a large skillet over medium heat and add the cowboy butter.

  2. 2

Allow the butter to melt completely until it begins to bubble slightly.

  3. 3

Add the button mushrooms to the skillet and stir well to coat every mushroom in the butter.

  4. 4

Cook for 20 to 25 minutes, stirring occasionally, until the mushrooms are tender and have soaked up the flavor.

  5. 5

Serve the mushrooms warm right from the skillet.

Tips

Store any leftovers in an airtight container in the fridge for up to 5 days. To reheat, warm them in the microwave in short bursts or toss them back into a skillet over medium heat until they are warmed through. It is best not to freeze these, as the texture can become a bit mushy.
