Vibrant Beet Hummus
A beautiful and earthy dip that brings a bright splash of color to any snack spread.
enzo81.xyzThere is something so satisfying about making your own hummus at home. This beet version is creamy and smooth, and the vibrant pink color always gets people talking at the dinner table.
I love serving this as part of a snack plate with fresh vegetables or warm pita bread. The sweetness of the beets balances the savory chickpeas perfectly, making it a very refreshing snack or appetizer.
Ingredients
- 15 ounces canned chickpeas, drained and rinsed
- 1 medium beet, roasted and peeled

- 2 tablespoons lemon juice
- 1 small garlic clove, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
5Instructions
- 1
Place the roasted beet, chickpeas, tahini, lemon juice, garlic, salt, and cumin into a food processor.
- 2
Pulse the mixture until it starts to break down.
- 3
With the food processor running, slowly drizzle in the olive oil.
- 4
Continue to process the dip until it reaches a smooth and creamy consistency.
- 5
Taste and add a little more salt or lemon juice if you prefer, then serve in a bowl with a drizzle of extra oil.
Tips
Store your hummus in an airtight container in the fridge for up to five days. It tastes great served with carrot sticks, cucumber slices, or toasted pita wedges.
