Don't let the name scare you away, because Swamp Potatoes are actually a classic comfort food that families absolutely love. It is one of those meals you can toss into your slow cooker in the morning and come home to later. The combination of savory sausage and buttery potatoes creates a meal that is both filling and incredibly cozy.

Because this dish is so simple to put together, it is a perfect candidate for busy weeknights. I recommend using Yukon Gold or red potatoes for the best texture, as they hold their shape beautifully while soaking up all those delicious spices. It is a true set it and forget it favorite for my kitchen.

Ingredients

  • 1/2 cup unsalted butter
  • 1 1/2 cups diced onion
  • 1 ounce packet dry onion soup mix
  • 3 pounds baby potatoes, halved
  • 14 ounces smoked sausage, sliced
  • 3 cups fresh green beans, cut into 1 inch pieces
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper

6Instructions

  1. 1

Place the halved baby potatoes into the bottom of a 6 to 8 quart slow cooker.

  2. 2

Add the diced onion, sliced smoked sausage, and fresh green beans on top of the potatoes.

  3. 3

Sprinkle the onion soup mix, Cajun seasoning, garlic powder, and black pepper evenly over the ingredients.

  4. 4

Place the butter on top, then cover the slow cooker.

  5. 5

Cook on LOW for 6 to 7 hours or on HIGH for 4 to 5 hours until the potatoes are tender.

  6. 6

Give everything a quick stir, taste to see if it needs more salt, and serve hot.

Tips

Serve this dish alongside warm cornbread or dinner rolls to help soak up the buttery juices. You can store any leftovers in an airtight container in the refrigerator for up to three days.
