Maple Sweet Potato Pie Bars
These sweet potato bars have a buttery cookie crust and a creamy maple filling that makes them a perfect holiday treat.
enzo81.xyzI love making these bars because they offer a fun twist on the classic sweet potato pie. Using Biscoff cookies for the crust gives it a deep, spiced flavor that pairs so well with the smooth maple filling.
These are great for feeding a crowd since they are easy to slice and serve. For the best texture, make sure your sweet potatoes are mashed very smooth before you mix everything together.
Ingredients
- 2 cups Biscoff cookie crumbs, about 30 cookies
- 5 tablespoons unsalted butter, melted
- 2 cups mashed sweet potato, about 2 large potatoes
- 1/2 cup pure maple syrup
- 2 large eggs
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup heavy cream, for topping
- 2 tablespoons pure maple syrup, for topping
- 1/2 teaspoon ground cinnamon, for topping
9Instructions
- 1
Preheat your oven to 350 degrees and line an 8 inch square baking pan with parchment paper.
- 2
Mix the cookie crumbs and melted butter in a small bowl until the mixture looks like wet sand.
- 3
Press the crumbs firmly into the bottom of the prepared pan and bake for 10 minutes.
- 4
While the crust cools, whisk the mashed sweet potatoes, maple syrup, eggs, cream, vanilla, and spices in a large bowl until the filling is completely smooth.
- 5
Pour the sweet potato filling over the baked crust and smooth out the top with a spatula.
- 6
Bake for 40 to 45 minutes or until the center is set and no longer jiggles.
- 7
Let the bars cool to room temperature on a wire rack, then refrigerate them for at least 3 hours to firm up.
- 8
Before serving, beat the heavy cream with the maple syrup and cinnamon until stiff peaks form.
- 9
Spread the whipped cream over the chilled bars and cut them into squares.
Tips
Store any leftover bars in an airtight container in the refrigerator for up to three days. If you are making these ahead of time, wait to add the whipped cream until you are ready to serve so it stays light and fluffy.
